Egg Sausage and Cheese Breakfast Rolls

Delicious breakfast rolls filled with scrambled eggs, sausage, and cheese wrapped in warm tortillas, perfect for busy mornings.

  • 4 large eggs
  • 1/2 lb sausage, cooked and crumbled
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Whisk together the eggs and season with salt and pepper in a bowl.
  3. Pour the egg mixture into the hot skillet. Scramble until fully cooked.
  4. Stir in the crumbled sausage, chopped spinach, and feta cheese. Mix well.
  5. Warm the tortillas briefly in a dry skillet or microwave for about 10 seconds.
  6. Divide the egg and sausage mixture evenly among the tortillas.
  7. Sprinkle shredded cheddar cheese on top of each filling.
  8. Roll the tortillas tightly, tucking in the sides as you go.
  9. Serve warm, or wrap in foil for a delightful on-the-go breakfast!
