Apple Fritter Bites

Delightful, bite-sized apple fritters with a cinnamon-spiced batter, perfect for brunch or dessert.

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 apple, peeled and diced
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and granulated sugar until well combined.
  2. In another bowl, whisk the eggs, milk, and vanilla extract together until frothy.
  3. Gradually pour the wet mixture into the dry ingredients. Stir until just combined; be careful not to overmix!
  4. Gently fold in the diced apple, making sure it’s evenly distributed throughout the batter.
  5. In a deep pan, heat the oil to 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil and fry for about 3-4 minutes, or until golden brown and fluffy.
  7. Carefully remove the fritters and place them on paper towels to drain excess oil.
  8. Dust generously with powdered sugar before serving.

Notes

For best results, ensure the oil temperature is correct before frying. You can store leftovers in an airtight container for up to two days at room temperature or freeze for up to a month.
