Apple Yogurt Pancakes

Delightful pancakes enriched with sweet tartness of apples, perfect for a cozy breakfast or brunch.

  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt (Greek or regular)
  • 1 cup milk
  • 1 large apple, grated (preferably Fuji or Honeycrisp)
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil
  • Additional oil for cooking
  • Optional: Chopped nuts or raisins

Instructions

  1. In a large bowl, combine the flour, baking powder, ground cinnamon, and salt. Whisk until evenly mixed.
  2. In a separate bowl, mix the yogurt, milk, egg, sugar, and vegetable oil together. Whisk until smooth.
  3. Gently fold the grated apple into the wet mixture.
  4. Pour the wet mixture into the dry ingredients gradually, stirring gently until just combined, being careful not to overmix.
  5. Preheat a greased skillet over medium heat.
  6. For each pancake, pour about 1/4 cup of batter into the skillet. Cook until tiny bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook until golden brown on the other side, another 2-3 minutes.
  8. Serve warm with butter and maple syrup, or sprinkle with nuts and raisins for a healthier option.

Notes

Use fresh baking powder for best results. Experiment with different apple varieties and add-ins like blueberries or chocolate chips.
