Apple Yogurt Pancakes

Delightful pancakes combining sweet apples with creamy yogurt, perfect for a nutritious breakfast.

  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt (Greek or regular)
  • 1 cup milk
  • 1 large apple, grated (preferably Fuji or Honeycrisp)
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Optional: Chopped nuts or raisins

Instructions

  1. Whisk the flour, baking powder, cinnamon, and salt until thoroughly combined.
  2. Mix the yogurt, milk, egg, sugar, and vegetable oil until smooth and creamy.
  3. Fold the grated apple into the wet ingredients.
  4. Pour the wet mixture into the dry ingredients, stirring just until blended.
  5. Preheat a skillet over medium heat and lightly grease it with vegetable oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Let them cook for 2-3 minutes or until bubbles form on the surface.
  7. Flip the pancakes and cook for another 2-3 minutes, until golden brown.
  8. Keep the cooked pancakes warm under a towel while you finish the remaining batter.

Notes

For a beautiful presentation, stack pancakes high and drizzle with maple syrup or honey. Serve with fresh fruit or warm compote.
