  • 1/2 cup plain yogurt (Greek or regular)
  • 1 cup milk
  • 1 large apple, grated (preferably a sweet variety like Fuji or Honeycrisp)
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Optional: Chopped nuts or raisins for extra flavor and texture

Instructions

  1. Whisk together the flour, baking powder, cinnamon, and salt until evenly mixed.
  2. Combine the yogurt, milk, egg, sugar, and vegetable oil in another bowl. Stir until smooth.
  3. Fold the grated apple into the wet mixture.
  4. Incorporate the wet ingredients into the dry mixture gradually. Stir until just combined; don’t worry if the batter has a few lumps.
  5. Preheat a non-stick skillet or griddle over medium heat, lightly greased with vegetable oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Carefully flip the pancakes and cook for another 2-3 minutes, until golden brown on both sides.
  8. Lower the heat if the pancakes are browning too quickly.
  9. Place finished pancakes on a plate and cover with a clean kitchen towel to keep warm while you cook the remaining batter.

Notes

Serve with maple syrup, powdered sugar, or fresh berries for added flavor. For longer storage, freeze pancakes for up to a month.
