Apple Yogurt Pancakes

A delightful twist on the classic breakfast pancakes made with creamy yogurt and fresh grated apple, perfect for any brunch or breakfast occasion.

  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt (Greek or regular)
  • 1 cup milk
  • 1 large apple, grated (preferably Fuji or Honeycrisp)
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Optional: Chopped nuts or raisins

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and salt until well combined.
  2. In another bowl, mix together the yogurt, milk, egg, sugar, and vegetable oil until smooth.
  3. Gently fold the grated apple into the wet mixture.
  4. Gradually combine the wet and dry ingredients, stirring until mixed with a few lumps remaining.
  5. Preheat a non-stick skillet over medium heat and grease lightly with oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake; cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip pancakes and cook for an additional 2-3 minutes until golden brown.
  8. Keep pancakes warm under a towel while finishing the remaining batter.

Notes

For extra flavor, drizzle pancakes with warm maple syrup or honey. Serve with fresh fruits for a colorful breakfast!
