Authentic Irish Potato Farls

Delightful and comforting flatbreads made from creamy potatoes, perfect for a traditional Irish breakfast.

  • 4 cups (650g/1lb 7oz) potatoes (Russet, Maris Piper, Roosters)
  • ¾ cup (4oz/115g) all-purpose flour
  • 1 ½ teaspoons sea salt
  • ½ teaspoon black pepper
  • 2 tablespoons (1oz/28g) butter (plus more for cooking)

Instructions

  1. Prepare the potatoes: Peel and chop them. Steam or boil in a medium pot until tender, about 20-25 minutes.
  2. Dry the potatoes: Transfer the cooked potatoes to a sieve over a bowl to allow them to dry for 5 minutes.
  3. Fluff the potatoes: Pass them through the sieve to achieve a light and fluffy texture.
  4. Make the dough: In a mixing bowl, combine the passed potatoes with flour, salt, pepper, and melted butter. Stir until a dough forms.
  5. Shape the farls: Place the dough on a lightly floured surface. Flatten it into an 8-inch round disc and cut into 6 equal pieces.
  6. Cook the farls: Heat a bit of butter in a large frying pan over medium heat. Add the potato farls, cooking for about 5 minutes or until golden brown. Flip and repeat on the other side for another 4-5 minutes.
  7. Serve hot: Enjoy immediately, either as part of a traditional Irish breakfast or on their own.

Notes

Store leftover farls in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat with a touch of butter.
