Instructions

  1. Toast your slices of sourdough bread until golden and crisp.
  2. Mash a ripe avocado in a bowl, seasoning it lightly with salt and pepper.
  3. Spread the mashed avocado over the toasted slices of bread.
  4. Layer the smoked salmon on top of the avocado.
  5. Poach your eggs to your desired doneness and place them atop the salmon.
  6. Finish with a sprinkle of furikake seasoning before serving.
