Bacon Cheddar Breakfast Muffins

Savory muffins bursting with crispy bacon and rich cheddar, perfect for breakfast or a snack.

  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Chopped green onions (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a muffin tin with cooking spray or butter.
  2. Whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.
  3. Fold in the shredded cheddar cheese and the crumbled bacon, ensuring they’re evenly dispersed throughout the mixture.
  4. Pour the egg mixture into each muffin cup, filling them about three-quarters full.
  5. Bake in the preheated oven for 18-20 minutes, or until the muffins are set and light golden brown on top.
  6. Allow the muffins to cool for a few minutes before carefully removing them from the tin.
  7. Serve warm, garnished with chopped green onions if desired.

Notes

These muffins can be prepared in advance and are great for meal prep. They can also be frozen for longer storage.
