Baked Apple Cider Donuts

Cozy baked apple cider donuts with warm spices, perfect for breakfast or a snack.

  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. Boil the apple cider in a saucepan until it reduces to about 1/2 cup. Set it aside to cool.
  3. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, mix the reduced apple cider, melted butter, eggs, and vanilla extract until smoothly combined.
  5. Fold the wet mixture into the dry ingredients until just combined—don’t over-mix!
  6. Spoon the batter into the donut pan, filling each cavity about 3/4 full.
  7. Bake for 10-12 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the donuts in the pan for a few minutes before transferring to a wire rack. Enjoy them warm or at room temperature!

Notes

For extra sweetness, consider sprinkling with cinnamon sugar before serving. Store in an airtight container at room temperature for up to three days.
