Baked Blueberry Cottage Cheese Bowls

A delightful fusion of creamy cottage cheese and sweet blueberries, perfect for breakfast or a light dessert.

  • 1 cup cottage cheese
  • 2 cups blueberries
  • 1/2 cup oats
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup honey or maple syrup
  • 1/2 tsp baking powder
  • Salt to taste
  • Your favorite toppings (e.g., nuts, additional fruit)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine cottage cheese, blueberries, oats, eggs, vanilla extract, honey (or maple syrup), baking powder, and a pinch of salt in a blender. Blend until smooth.
  3. Pour the mixture into greased muffin tins or ramekins, filling each about three-quarters full.
  4. Bake for 25-30 minutes, until set and the tops are lightly golden.
  5. Allow to cool slightly, then add your favorite toppings, and enjoy warm!

Notes

Use fresh blueberries for the best flavor, but frozen ones work just as well. Don’t over-blend; a little texture adds character.
