  • 4 eggs
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, add the cherry tomatoes and drizzle them with olive oil.
  3. Crumble the feta cheese generously over the tomatoes.
  4. Bake for 15 minutes, allowing the flavors to meld.
  5. Carefully remove the dish from the oven after baking time.
  6. Gently crack the eggs into the baking dish, ensuring they are evenly spaced.
  7. Add the fresh spinach around the eggs, tucking it into the edges.
  8. Season the entire dish with salt and pepper according to your taste.
  9. Return the dish to the oven and bake for an additional 10-12 minutes, or until the eggs reach your preferred doneness.
  10. If desired, garnish with fresh herbs before serving hot.

Notes

For added flavor, marinate cherry tomatoes in balsamic vinegar before adding. Substitute feta with goat cheese or use kale instead of spinach if preferred.
