Baked Feta Eggs with Tomatoes and Spinach

A delightful dish combining creamy feta, juicy tomatoes, and perfectly baked eggs, perfect for brunch or quick weeknight dinners.

  • 4 large eggs
  • 200g feta cheese
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, combine the cherry tomatoes and feta cheese.
  3. Drizzle the mixture with olive oil and generously season with salt and pepper.
  4. Bake for 15-20 minutes, until the tomatoes blister and the feta softens beautifully.
  5. Remove the baking dish from the oven and create four wells in the baked feta and tomatoes.
  6. Crack an egg into each well and pile fresh spinach on top.
  7. Return the dish to the oven and bake for an additional 8-10 minutes or until the eggs are cooked to your liking.
  8. Garnish with fresh herbs if desired and serve warm.

Notes

Serve with crusty bread for dipping or a mixed greens salad. Store leftovers in an airtight container in the refrigerator for 2-3 days.
