Banana Oatmeal Bars

Delicious and nutritious Banana Oatmeal Bars that are perfect for breakfast, snacks, or dessert.

Ingredients

  • 1½ cups mashed bananas (approx. 3 bananas)
  • ½ cup nut butter (such as almond or peanut)
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F.
  2. Line a 9×9 baking pan with parchment paper.
  3. In a large mixing bowl, combine the mashed bananas and nut butter, mixing until smooth.
  4. Stir in the rolled oats, cinnamon, vanilla extract, maple syrup, chocolate chips, and salt. Mix until well combined.
  5. Transfer the mixture to your lined baking pan and flatten it into an even layer.
  6. If you’re feeling indulgent, sprinkle a few extra chocolate chips on top before baking.
  7. Bake for 18 to 20 minutes, or until the edges are golden brown and the bars are set in the middle.
  8. Allow the bars to cool completely in the pan, then slice them into squares or rectangles. Enjoy!

Notes

For a nut-free version, use sunflower seed butter. Store in an airtight container for up to 5 days or freeze for up to 3 months.
