Banana Oatmeal Bars

Delicious and nutritious banana oatmeal bars, perfect for breakfast or a snack.

Ingredients

  • 1½ cups mashed bananas (approx. 3 bananas)
  • ½ cup nut butter (peanut, almond, or your choice)
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, nut butter, rolled oats, cinnamon, vanilla extract, maple syrup, chocolate chips, and salt. Mix thoroughly until well combined.
  3. Transfer the mixture into the lined baking pan. Smooth it out into an even layer, and if desired, sprinkle extra chocolate chips on top.
  4. Bake for about 18 to 20 minutes, or until the edges are golden, and the bars are set.
  5. Allow to cool completely in the pan before slicing into squares.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for about a week. For longer storage, freeze individually wrapped bars for up to three months.
