  • 4 medium golden potatoes (or sweet potatoes for a sweeter kick)
  • 2 tablespoons olive oil (or avocado oil for frying)
  • 4 slices bacon
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon black pepper (adjust to taste)
  • 1 teaspoon Old Bay seasoning
  • 2 cloves garlic (minced)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon parsley (or chives, chopped)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dice the potatoes into bite-sized pieces for even cooking.
  3. Boil the potatoes in a pot of salted water for 10-12 minutes, until they are just tender. Drain and let them cool slightly.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Cook the bacon until crispy, then remove it from the skillet and set aside.
  6. Add the par-cooked potatoes to the same skillet. Season with salt, pepper, and Old Bay seasoning. Sauté until golden and crispy, about 10-15 minutes.
  7. Add the minced garlic, cooking for another minute until fragrant.
  8. Crumble the crispy bacon back into the skillet and mix everything gently.
  9. Drizzle the mixture with pure maple syrup, tossing lightly to combine the flavors.
  10. Remove from heat and garnish with chopped parsley or chives before serving.

Notes

For extra flavor, try using flavored olive oil or different spices like paprika or cayenne. You can prepare bacon and boiled potatoes ahead of time to save on cooking.
