Berry Protein Pancake Bites

Fluffy and fruity pancake bites packed with protein, perfect for a quick breakfast or snack.

Ingredients

  • 1 cup rolled oats
  • 1 scoop protein powder
  • 1 cup cottage cheese (or Greek yogurt)
  • 2 eggs
  • 1/2 cup mixed berries (fresh or frozen)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Combine the rolled oats, protein powder, cottage cheese, eggs, honey (if using), vanilla extract, baking powder, and a pinch of salt in a large bowl. Blend until smooth.
  3. Fold in the mixed berries.
  4. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  5. Bake for 15-20 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  6. Let cool slightly before removing from the tin.

Notes

Customize your protein powder and sweetener to your taste. Store in an airtight container in the refrigerator for up to 5 days.
