Berry Protein Pancake Bites

A fun and nutritious twist on traditional pancakes, these Berry Protein Pancake Bites are perfect for breakfast or a snack.

Ingredients

  • 1 cup oats
  • 1/2 cup cottage cheese
  • 2 eggs
  • 1 cup berries (blueberries, raspberries, or strawberries)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. Combine the oats, cottage cheese, eggs, and honey (if using) in a blender or food processor. Add the baking powder, vanilla extract, and a pinch of salt. Blend until smooth.
  3. Fold in the berries gently so they’re evenly dispersed throughout the batter.
  4. Pour the batter into the muffin tin, filling each cup about two-thirds full.
  5. Bake for 15-20 minutes, or until the tops are golden and a toothpick inserted comes out clean.
  6. Let cool slightly before removing from the tin, and enjoy!

Notes

You can elevate the experience by drizzling maple syrup or honey on top, or pairing them with Greek yogurt.
