Hash Brown Breakfast Casserole

  • 3 cups hash browns
  • 6 large eggs
  • 1 cup diced ham
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell peppers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the hash browns, eggs, milk, salt, and pepper in a large mixing bowl. Mix until well incorporated.
  3. Stir in the chopped ham, cheese, onion, and bell peppers until thoroughly mixed.
  4. Pour the mixture into a greased baking dish, spreading it out evenly.
  5. Bake for 30–35 minutes, or until the eggs are set and a golden layer forms on top.
  6. Let it cool slightly before serving.

Notes

Leftovers can be stored for 3-4 days in the refrigerator. Reheat in the microwave or toaster oven for best results.
