A hearty breakfast casserole with layers of ground beef, bacon, eggs, and cheese, perfect for family gatherings or brunch.

  • 1 pound bacon, chopped
  • 4 ounces cream cheese, softened
  • ½ cup sour cream
  • 1 cup whole milk
  • 8 large eggs
  • 2 cups shredded cheddar cheese, divided
  • 1 (30-ounce) bag frozen shredded hash browns, thawed and drained
  • 1 (1-ounce) packet dry ranch seasoning mix
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. In a skillet over medium heat, cook the ground beef and chopped bacon until both are browned and crispy. Drain off any excess grease.
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, and whole milk. Beat until smooth and creamy.
  3. Stir in the ranch seasoning mix, onion powder, garlic powder, salt, and pepper until well incorporated.
  4. In a separate bowl, lightly beat the eggs. Slowly pour them into the creamy mixture, stirring gently to mix.
  5. Fold in 1 cup of shredded cheddar cheese for a delightful, cheesy blend.
  6. Spread the thawed hash browns evenly in a greased 9×13-inch baking dish. Crumble half of the cooked beef and bacon over the top.
  7. Pour the creamy egg mixture evenly over the hash browns and meat. Layer the remaining beef, bacon, and the second cup of shredded cheddar cheese on top.
  8. Preheat your oven to 350°F (175°C) and bake for 45 to 55 minutes until the casserole is set and golden brown.
  9. Allow the casserole to rest for 10 to 15 minutes before slicing and serving.
