Biscuits and Chorizo Gravy

A comforting dish of fluffy biscuits drenched in rich chorizo gravy, perfect for brunch or family dinners.

  • 10 biscuits
  • 2 (9-ounce) tubes Cacique pork chorizo
  • 1/2 medium white or yellow onion, finely diced
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups whole milk
  • Salt and pepper to taste

Instructions

  1. Prepare the biscuits according to the package instructions or your favorite homemade recipe.
  2. Heat a large sauté pan or skillet over medium-high heat. Add the chorizo, breaking it apart with a spatula. Cook for about 5 minutes until nicely browned.
  3. Mix in the finely diced onion and cook for an additional 2 minutes, stirring occasionally.
  4. Sprinkle the flour over the chorizo mixture and stir well for about a minute until combined.
  5. Gradually lower the heat to medium-low, then add the milk. Let the mixture simmer, stirring frequently for 5-7 minutes until it thickens to your liking.
  6. Ladle the chorizo gravy generously over the warm biscuits. Season with salt and pepper to taste. Serve immediately!
