Bite-Sized Pancake Mini Muffins

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt until combined.
  3. Mix the buttermilk, egg, melted butter, and vanilla extract until smooth in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each mini muffin cup about two-thirds full with batter.
  6. Bake in the preheated oven for 10-12 minutes, or until golden brown and a toothpick comes out clean.
  7. Allow the muffins to cool slightly in the tin before removing them. Enjoy!
