Blueberry Breakfast Quesadilla

A delightful morning treat filled with sweet blueberries and creamy ricotta cheese, perfect for busy mornings or leisurely brunches.

  • 2 tortillas
  • 1 cup blueberries
  • 1/2 cup ricotta cheese
  • 1/2 teaspoon cinnamon
  • 1 tablespoon honey (optional)
  • Butter or oil for cooking

Instructions

  1. Combine the ricotta cheese, blueberries, and cinnamon in a mixing bowl. If you prefer it sweeter, drizzle in the honey and stir until well mixed.
  2. Heat about a teaspoon of butter or oil in a non-stick pan over medium heat.
  3. Place one tortilla in the pan and spread the blueberry mixture evenly over it.
  4. Top with the second tortilla, pressing down gently.
  5. Cook for about 3-4 minutes, or until the bottom is a lovely golden brown.
  6. Carefully flip the quesadilla and cook the other side until it’s also golden and crispy.
  7. Remove from the pan, slice into wedges, and serve warm.

Notes

Serve with powdered sugar and a side of maple syrup for dipping. Fresh fruit or a berry compote makes a great side. Store leftovers in an airtight container in the fridge for up to 2 days.
