Blueberry Breakfast Quesadillas

A delightful spin on traditional quesadillas, combining melting mozzarella cheese and juicy blueberries for a sweet and savory breakfast treat.

  • 4 medium flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh blueberries
  • 1 tablespoon butter or olive oil
  • 1 tablespoon honey (optional for drizzling)
  • Fresh cilantro (for garnish)

Instructions

  1. Heat a non-stick skillet over medium heat and add butter or olive oil.
  2. Place one tortilla in the skillet and sprinkle a generous layer of shredded mozzarella cheese on one half.
  3. Add fresh blueberries over the cheese.
  4. Fold the tortilla in half. Cook for about 2-3 minutes until the bottom is golden brown and crispy.
  5. Carefully flip the quesadilla and cook for another 2-3 minutes until the cheese has melted and the other side is golden brown.
  6. Remove from the skillet, allow to cool slightly, then drizzle with honey.
  7. Garnish with fresh cilantro before slicing into wedges.

Notes

For variations, consider using goat cheese or feta. Add sliced bananas, nuts, or lemon zest for extra flavor.
