Blueberry Cottage Cheese Breakfast Bake

A wholesome and satisfying breakfast bake packed with blueberries and protein to fuel your day.

  • 2 cups cottage cheese
  • 1 cup fresh or frozen blueberries
  • 1 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. Combine 2 cups cottage cheese, 3 large eggs, 1/4 cup honey or maple syrup, and 1 teaspoon vanilla extract in a large bowl until smooth.
  3. Add 1 cup rolled oats, 1 teaspoon baking powder, 1/2 teaspoon cinnamon, and a pinch of salt; stir gently until just combined.
  4. Fold in 1 cup of blueberries.
  5. Pour the mixture into the greased baking dish, spreading it evenly.
  6. Bake for 30-35 minutes, or until the center is set and the top is lightly golden.
  7. Cool for a few minutes before slicing. Enjoy warm, or refrigerate for meal prep.

Notes

For extra sweetness, serve with Greek yogurt or a drizzle of honey. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
