Blueberry Cottage Cheese Breakfast Bake

A delicious and nutritious breakfast bake made with cottage cheese, oats, and blueberries, perfect for any time of the day.

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 cup fresh or frozen blueberries
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese, rolled oats, blueberries, eggs, milk, honey (or maple syrup), vanilla extract, baking powder, and a pinch of salt.
  3. Mix the ingredients thoroughly until everything is well-blended.
  4. Pour the mixture into a greased baking dish, ensuring it’s spread out evenly.
  5. Bake for 25-30 minutes. You’ll know it’s done when the top turns golden brown and feels set to the touch.
  6. Once out of the oven, allow it to cool slightly before cutting into squares. Serve warm for the best experience!

Notes

For a tangier flavor, Greek yogurt can replace cottage cheese. Substitute honey with maple syrup if needed.
