Blueberry Greek Yogurt Bites

Delightful and healthy Blueberry Greek Yogurt Bites packed with flavor, perfect for a quick snack, dessert, or breakfast.

  • 1½ cups plain Greek yogurt
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¾ cup fresh or frozen blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine blueberries, lemon juice, and optional honey. Cook for about 5–6 minutes, stirring frequently until the berries soften and release their juices. Gently mash them until you achieve a jam-like consistency. Set aside to cool.
  2. Make the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, vanilla extract, and honey until smooth. Adjust the sweetness to your liking.
  3. Assemble the Bites: Spoon approximately 1 tablespoon of yogurt into each cavity of a mini muffin tray. Top with ½ teaspoon of the cooled blueberry compote and swirl gently with a toothpick to create a marbled effect.
  4. Freeze: Lay the tray flat in the freezer for at least 120 minutes or until the bites are fully solid.
  5. Serve & Store: Carefully pop the bites out of the tray and place them in an airtight container in the freezer. They are best thawed for 2–4 minutes before enjoying.
