Bourbon Maple Bacon Stuffed Toast

  • 8 slices brioche or challah bread, cut thick
  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch fine salt

Instructions

  1. Preheat your oven to 400°F. Set a wire rack over a baking tray.
  2. Arrange the bacon slices on the wire rack. Bake for about 15 minutes, or until crispy. Once finished, transfer to paper towels and finely chop.
  3. Whisk together the eggs, whole milk, vanilla extract, and ground cinnamon in a shallow bowl until fully mixed.
  4. Combine the softened cream cheese with the chopped bacon in another small bowl, mixing until smooth.
  5. Cut a pocket into each slice of bread using a sharp knife. Generously stuff each slice with the bacon and cream cheese mixture.
  6. Dip each stuffed slice in the egg custard mixture, ensuring all sides are well coated.
  7. Melt the unsalted butter in a large non-stick skillet over medium heat. Fry each stuffed slice for 3 to 4 minutes on each side until golden brown and crispy.
  8. Warm the maple syrup, bourbon, vanilla extract, and a pinch of salt in a small saucepan over low heat for about 2 minutes.
  9. Plate the French toast and drizzle generously with the warm maple bourbon glaze. Enjoy!

For a lighter option, consider using reduced-fat cream cheese. Serve with fresh fruit or whipped cream for added indulgence.
