Breakfast Bombs

A delightful combination of eggs, cheese, and meat wrapped in biscuit dough, perfect for a quick and satisfying breakfast.

  • 1 can refrigerated biscuit dough
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked breakfast sausage or bacon, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons melted butter
  • 1 tablespoon chopped parsley or chives (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, scramble the eggs and season with salt and pepper to taste.
  3. In the same pan, cook your choice of breakfast sausage or bacon until fully cooked, then crumble it into small pieces.
  4. On a clean surface, flatten each biscuit round with your fingers or a rolling pin.
  5. Spoon scrambled eggs into the center of each biscuit round, add a sprinkle of cheese, and top with crumbled meat.
  6. Carefully pinch the edges of the biscuit to seal the filling inside; make sure nothing escapes during baking.
  7. Place the sealed dough balls seam-side down on a baking tray lined with parchment paper.
  8. Brush each bomb with melted butter and sprinkle with parsley or chives if using.
  9. Bake for 15-18 minutes, or until they’re golden brown.
  10. Allow to cool slightly before serving.

Notes

For an extra crispy exterior, brush each bomb with an additional layer of butter before baking. Feel free to experiment with different cheeses.
