  • 1 cup cooked brown rice or quinoa
  • 1 cup cooked black beans or scrambled eggs
  • 1 red bell pepper, diced
  • 1 small onion, chopped
  • 1 avocado, sliced
  • 1 cup salsa
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Instructions

  1. Heat your skillet over medium heat. Add the chopped onion and diced red bell pepper. Sauté for about 5–7 minutes, or until they soften and become fragrant.
  2. Stir in your choice of black beans or scrambled eggs, allowing them to heat through.
  3. Season the mixture with salt, pepper, and optional spices like cumin or chili powder.
  4. In large bowls, begin with a base layer of your cooked brown rice or quinoa.
  5. Top the rice with your sautéed vegetable and protein mixture.
  6. Add slices of avocado, a generous dollop of salsa, and finish with fresh cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat before serving.
