Breakfast Burrito Grilled Cheese

A delightful fusion of breakfast burrito and grilled cheese, featuring fluffy eggs, savory sausage, and melted cheese wrapped in a crispy tortilla.

  • 2 tablespoons butter
  • 6 large eggs
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • Sea salt & pepper (to taste)
  • 4 large tortillas (warmed)
  • 2 cups potatoes (roasted or pan-fried)
  • 1 cup cheddar cheese (grated)
  • 1 cup breakfast sausage (cooked and cut into pieces)
  • Sour cream
  • Salsa

Instructions

  1. In a medium skillet, melt the butter over medium heat.
  2. In a bowl, whisk together the eggs, garlic powder, cayenne pepper, sea salt, and pepper. Pour the mixture into the skillet.
  3. Cook until the eggs are fluffy and fully set. Then remove them from heat.
  4. Take a warmed tortilla and place it on your work surface.
  5. Add ½ cup of the scrambled eggs, followed by ½ cup of your potatoes, ¼ cup of cheddar cheese, and ¼ cup of the sausage.
  6. Roll the tortilla tightly, tucking in the sides as you go.
  7. Heat a little more butter or oil in the skillet. Cook the rolled burrito until golden brown on both sides, or bake at 350°F (175°C) for about 10 minutes.
  8. Serve immediately with a generous side of sour cream and salsa.

Notes

For added flavor, serve with a side of fresh fruit or a salad. A squeeze of lime can enhance the taste.
