Breakfast Burritos

Delicious and versatile breakfast burritos filled with scrambled eggs, lean meat, and cheese for a hearty start to your day.

  • 4 large eggs
  • 1 cup cooked lean meat (such as turkey or chicken sausage)
  • 1/2 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Salsa (optional)

Instructions

  1. Sauté the diced bell peppers and onions in a skillet until they are soft.
  2. Whisk the eggs in a bowl and pour them into the skillet, cooking until scrambled.
  3. Add the cooked meat and cheese to the skillet, stirring until combined and the cheese is melted.
  4. Warm the tortillas in a separate pan and spoon the egg mixture into each tortilla.
  5. Roll the tortillas into burritos, folding in the sides to secure the filling.
  6. Serve warm with salsa if desired, or allow them to cool before freezing.

Notes

For a creamier texture, add a splash of milk or cream to the eggs. Experiment with spices for extra flavor.
