Breakfast Burritos

Delicious breakfast burritos filled with fluffy scrambled eggs, crispy potatoes, and cheese, perfect for a hearty morning meal.

Ingredients

  • 4 large eggs
  • 2 medium potatoes, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup cooked and crumbled sausage or bacon (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • 4 large tortillas
  • Sour cream and salsa for serving (optional)

Instructions

  1. Heat a skillet over medium heat.
  2. Add the diced potatoes and cook until golden and crispy. Remove from the skillet and set aside.
  3. In the same skillet, sauté the bell peppers and onions until soft.
  4. Whisk the eggs in a bowl, then pour into the skillet, scrambling until fluffy.
  5. Add the crispy potatoes back into the skillet, along with optional sausage or bacon. Season with salt and pepper.
  6. Lay each tortilla flat. Place a generous amount of the filling in the center, sprinkle cheese on top, and roll tightly.
  7. If meal prepping, wrap each burrito in foil or plastic wrap and freeze.
  8. To reheat, unwrap the burrito and microwave for 2-3 minutes.

Notes

These burritos can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. Enjoy fresh or reheat for convenience.
