Breakfast Casserole

A hearty and flavorful Breakfast Casserole with pork sausage, eggs, and colorful peppers, perfect for family brunch or meal prep.

  • 2 pounds pork sausage
  • 12 eggs
  • 1 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 green onions, chopped
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Generously spray a 9×13-inch baking dish with cooking spray for easy cleanup.
  2. In a large mixing bowl, whisk together the eggs, sour cream, and milk until smooth. Add in the shredded cheddar cheese, kosher salt, and black pepper, mixing on low speed with an electric mixer until just combined.
  3. Heat a skillet over medium heat, and add the pork sausage. Cook until it’s browned and crumbly. Drain any excess grease, then stir the sausage into the egg mixture.
  4. Using the same skillet, sauté the diced green and red bell peppers along with the chopped green onions for about 2-3 minutes, until they are slightly softened. Gently fold this veggie mix into the egg and sausage blend.
  5. Pour the complete mixture into the prepared baking dish, spreading it evenly. Bake for 35-50 minutes, or until the edges are set and the center has a slight jiggle.
  6. Allow the casserole to cool for a few minutes before slicing and serving.

Notes

For a fluffier texture, consider separating the egg whites from the yolks and beating them until stiff peaks form. Let the casserole sit post-baking for easier slicing.
