Breakfast Croissant Sandwich

A delightful sandwich featuring flaky croissants filled with creamy scrambled eggs, crispy bacon, and melted cheddar cheese, perfect for any breakfast occasion.

  • 2 large croissants
  • 2 large eggs
  • 2 slices cheddar cheese
  • 2 slices cooked bacon
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a skillet over medium heat for about 1-2 minutes.
  3. Crack two large eggs into a small bowl and whisk until well combined.
  4. Melt 1 tablespoon of butter in the skillet, then pour in the eggs. Cook without stirring for 1-2 minutes.
  5. Once the edges are set, sprinkle with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Gently fold the eggs until fully cooked.
  6. Remove the cooked eggs from the skillet and set them aside.
  7. Slice the croissants in half and warm them in the oven for about 5 minutes.
  8. On the bottom half of each croissant, spread 1 tablespoon of mayonnaise. On the top half, slather on 1 teaspoon Dijon mustard.
  9. Layer a slice of cheddar cheese, bacon, and the cooked eggs onto the bottom half.
  10. Press the top croissant half onto the sandwich, cut in half if desired, and serve immediately!

Notes

For a fresher twist, swap mayonnaise with avocado or try different cheeses like pepper jack. Best served with fresh fruit or hash browns.
