  • 6 flour tortillas
  • 1 lb sausage
  • 2 cups potatoes, diced
  • 1 cup cheese, shredded
  • 4 eggs
  • 1/2 cup cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the sausage and potatoes together over medium heat until fully cooked and crispy.
  3. Whisk together the eggs and cream until smooth and well combined.
  4. Lay a tortilla flat, add a portion of the sausage and potato mixture, sprinkle with cheese, and roll tightly.
  5. Arrange the filled tortillas seam-side down in a greased baking dish.
  6. Pour the egg mixture evenly over the rolled tortillas.
  7. Bake for 25-30 minutes until the eggs are set and the top is golden brown.
