A delightful blend of breakfast and dinner, featuring fluffy eggs, crispy bacon, and toasty whole wheat bread, all drizzled with maple syrup.

  • 1 cup milk
  • 6 strips bacon
  • 4 slices whole wheat bread
  • 1 cup cheddar cheese, shredded
  • Olive oil (for cooking)
  • 2 medium potatoes, diced
  • 1 cup bell peppers, diced
  • 1 medium onion, diced
  • Salt and pepper (to taste)
  • Maple syrup (for serving)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat and cook the bacon until crispy.
  2. Remove the bacon and set it aside, leaving drippings in the skillet.
  3. Add diced potatoes, cooking for about 10 minutes until golden brown.
  4. Toss in bell peppers and onions until tender.
  5. Whisk together eggs and milk in a bowl, then pour into the skillet.
  6. Cook on low heat, stirring gently until eggs are fluffy and fully cooked.
  7. Toast the whole wheat bread slices until golden brown.
  8. Layer each bread slice with fluffy egg mixture and crispy bacon, topping with cheddar cheese.
  9. Serve hot, drizzled with maple syrup and garnished with fresh herbs if desired.

Notes

For extra crispy bacon, bake it in the oven. You can meal prep ingredients ahead of time.
