A delightful combination of fluffy omelets, cheesy breakfast casserole, and perfectly cooked pancakes that brings comfort and nostalgia to the dinner table.

  • 8 Eggs
  • 1 cup Diced Ham
  • 1 cup Shredded Cheese
  • 2 cups Chopped Potatoes
  • 1 cup Crumbled Sausage
  • 4 slices Bread
  • 2 cups Pancake Mix
  • 1 1/2 cups Milk
  • 2 tbsp Butter
  • 1 cup Mixed Vegetables (like peppers and onions)

Instructions

  1. Beat the eggs in a bowl until well mixed. Heat a skillet over medium-high heat and pour in the eggs. Sprinkle with cheese and diced ham. Cook until the eggs are set, then fold the omelet in half and remove from heat.
  2. Layer beaten eggs, chopped potatoes, crumbled sausage, and shredded cheese in a baking dish. Bake in a preheated oven for 25-30 minutes, until firm and golden.
  3. Mix pancake mix with milk until smooth. Pour a ladleful onto a hot griddle. Wait for bubbles to form on the surface, then flip and cook until both sides are golden brown.
  4. Plate your creations and let everyone choose their favorite toppings—syrup, fresh fruit, or whipped cream are delightful additions!

Feel free to swap out ingredients based on availability, such as using turkey sausage or going vegetarian. For perfectly fluffy omelets, avoid overcrowding the pan and cook one or two at a time.
