  • 1 cup Cheese (shredded)
  • 1/2 cup Milk
  • 2 cups Spinach (fresh)
  • 4 slices Bread
  • Syrup (for serving)
  • 4 slices Bacon (cooked)
  • 1 cup Vegetables (bell peppers, zucchini, etc.)

Instructions

  1. Prepare the Frittata: In a large bowl, whisk together the eggs, milk, and cheese until light and fluffy. Gently fold in the fresh spinach, then pour this mixture into a hot skillet. Cook until just set.
  2. Make the Quiche: Preheat your oven and line a pie dish with pastry crust. Pour the egg mixture over assorted chopped vegetables, then bake until golden brown.
  3. Toast the Bread: While the quiche is baking, toast your slices of bread, then layer crispy bacon and frittata slices between the warm bread.
  4. Cook Waffles: Whip up waffle batter and cook until golden. Serve with warm syrup.

Notes

For fluffier frittatas, beat egg whites separately. Use pre-chopped vegetables for faster prep. Reheat leftovers in the oven for crispiness.
