Breakfast Fried Rice

A quick and comforting dish of fried rice with crispy bacon, scrambled eggs, and mixed vegetables.

Ingredients

  • 2 cups cooked rice
  • 4 strips bacon, diced
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • 1 tablespoon oil (for cooking)

Instructions

  1. Heat the oil in a large skillet or wok over medium heat.
  2. Add the diced bacon and cook until it’s nice and crispy.
  3. Push the crispy bacon to one side of the pan. Pour in the beaten eggs and scramble them until fully cooked.
  4. Stir in the mixed vegetables and sauté them for a few minutes until they are tender.
  5. Add the cooked rice into the mix, and stir everything together until it’s well combined.
  6. Drizzle the soy sauce over the top and stir again to ensure even seasoning throughout.
  7. Season with salt and pepper to taste, then sprinkle the chopped green onions for an added flavor boost.
  8. Cook for another couple of minutes, stirring frequently.
  9. Serve hot and enjoy!

Notes

Use day-old rice for best results. Feel free to substitute bacon for tofu or add different vegetables based on preference.
