Breakfast Grilled Cheese

A warm and cheesy breakfast sandwich with breakfast sausage, scrambled eggs, and layers of melted cheese between hearty sourdough bread.

  • 1/2 pound ground breakfast sausage
  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter (divided)
  • 8 slices sourdough bread

Instructions

  1. Crumble the ground sausage in a large non-stick skillet. Cook over medium heat until browned. Remove from the skillet and set aside.
  2. Melt 2 tablespoons of butter in the same skillet. Add the beaten eggs and scramble gently until just set.
  3. Mix the cooked sausage with the scrambled eggs in a bowl until well blended.
  4. Butter one side of each slice of sourdough. Place a slice in the skillet, butter-side down. Add a slice of cheese, a scoop of the egg-sausage mixture, another slice of cheese, and top with a second slice of bread (buttered side out).
  5. Cook the sandwich in the skillet over medium heat for 3-4 minutes on each side, until both sides are golden brown and the cheese is melty.
  6. Slice the sandwich in half and enjoy hot for the best experience!

Notes

For a twist, consider using sharper cheddar or adding fresh herbs to the egg mix. Serve with fresh fruit or a simple green salad.
