Breakfast Hash

A hearty and customizable breakfast hash featuring crispy potatoes, bacon, and sunny-side-up eggs, perfect for busy mornings or lazy weekends.

  • 4 medium potatoes, diced
  • 4 eggs
  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Once hot, add the diced potatoes. Cook until crispy and golden brown, about 15-20 minutes.
  3. Toss in the chopped bacon. Cook until it’s crispy and fragrant.
  4. Add in the diced onion and bell pepper. Sauté until softened.
  5. Create four little wells in the hash. Carefully crack an egg into each well.
  6. Cover the skillet and cook until the eggs reach your desired doneness.
  7. Finally, season with salt and pepper. Serve warm and revel in the deliciousness!

Notes

For crispy potatoes, avoid crowding the skillet. You can also substitute turkey bacon or add spinach for a vegetarian version.
