Breakfast Hashbrown Casserole

A delicious and hearty breakfast casserole featuring crispy hash browns, savory cheese, and your choice of meat, all baked to golden perfection.

  • 4 cups frozen shredded hash browns (thawed)
  • 1 cup shredded cheddar cheese
  • ½ cup diced onion (red or yellow)
  • ½ cup diced bell pepper
  • ½ cup cooked bacon or sausage (optional: turkey bacon)
  • ½ cup sour cream
  • ¼ cup melted butter
  • ¼ cup milk
  • 2 large eggs
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. In a large mixing bowl, combine the thawed hash browns, cheddar cheese, diced onion, bell pepper, and cooked bacon or sausage. Stir until mixed well.
  3. In another bowl, whisk together the sour cream, melted butter, milk, eggs, salt, and black pepper until smooth.
  4. Pour the wet mixture over the hash brown mixture. Gently fold to combine.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Bake for 40-45 minutes, or until the casserole is golden and cooked through.
  7. Allow it to rest for 5 minutes before serving.

Notes

Patience is key! Make sure your hash browns are completely thawed. Try sautéing onions and bell peppers in olive oil for added flavor.
