Breakfast Pancake Poppers

A delightful twist on traditional pancakes, these poppers are soft, versatile, and perfect for busy mornings.

Ingredients

  • 2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 3/4 cups Milk
  • 2 large Eggs
  • 1/4 cup Unsalted butter (melted)
  • 1 tsp Vanilla extract
  • 1/2 cup Optional mix-ins (Blueberries, chocolate chips, bananas, or strawberries)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the dry ingredients in a large bowl: all-purpose flour, granulated sugar, baking powder, and salt.
  3. Whisk the wet ingredients in a separate bowl: milk, eggs, melted butter, and vanilla extract.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Incorporate your chosen mix-ins into the batter.
  6. Scoop the batter into a greased mini muffin tin, filling each cup about three-quarters full.
  7. Bake for 12-15 minutes or until the poppers are golden brown.
  8. Let cool for about 5 minutes before transferring to a wire rack.
  9. Serve warm drizzled with maple syrup or a topping of your choice!

Notes

Overmixing can lead to tough poppers; mix just until combined. Feel free to experiment with different mix-ins like nuts and dried fruits.
