Breakfast Quesadillas

Delicious and quick Breakfast Quesadillas filled with eggs, crispy bacon, and cheese, perfect for any time of the day.

Ingredients

  • 2 large eggs
  • 4 slices of bacon
  • 1 cup shredded cheddar cheese
  • 4 tortillas
  • Salt and pepper to taste
  • Dipping sauces (optional)

Instructions

  1. Heat a skillet over medium heat. Cook the bacon until it’s crispy and then transfer it to a plate lined with paper towels to drain the excess grease.
  2. Scramble the eggs in the same skillet, lightly seasoning them with salt and pepper.
  3. Lay a tortilla flat in the skillet. On one half, sprinkle half of the shredded cheddar cheese.
  4. Add the scrambled eggs and crumbled bacon. Top with the remaining cheese and then fold the tortilla in half.
  5. Cook the quesadilla for a couple of minutes on each side until both sides are golden brown and the cheese has melted.
  6. Serve immediately, with your favorite dipping sauces if desired!

Notes

For perfect quesadillas, keep the heat moderate and allow the bacon to crisp up well. Feel free to add veggies for extra nutrition.
