Breakfast Quesadillas

Delicious and customizable breakfast quesadillas filled with scrambled eggs, ground turkey, and cheese, perfect for any meal.

  • 4 large flour tortillas
  • 1 pound ground turkey
  • 2 cups shredded Colby Jack cheese
  • 6 eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • Sliced green onions (for garnish)
  • Salsa (for serving)
  • Sour cream (for serving)

Instructions

  1. Begin by heating a skillet over medium heat. Add the ground turkey and cook until browned, draining any excess grease.
  2. In a separate bowl, whisk together the eggs, milk, salt, and pepper until everything is well mixed.
  3. Pour the egg mixture into the skillet with the turkey. Scramble until the eggs are just set, allowing for a soft texture.
  4. Heat another skillet over medium heat. On one half of each tortilla, spread the scrambled egg mixture, followed by a layer of ground turkey, and top with cheese.
  5. Fold the tortillas over to form half-moon shapes. Cook them in the skillet for 2-3 minutes on each side until they’re golden brown and crispy.
  6. Transfer the cooked quesadillas to a cutting board. Let them cool slightly before slicing into wedges.
  7. Serve warm with salsa and sour cream on the side.

Notes

For a vegetarian version, replace turkey with black beans or sautéed mushrooms. For extra flavor, consider adding sautéed bell peppers and onions.
