Breakfast Skillet

A hearty morning delight loaded with crispy bacon, golden potatoes, vibrant peppers, and perfectly cooked eggs.

Ingredients

  • 4 slices of bacon
  • 4 eggs
  • 1 cup diced potatoes
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove and set aside.
  2. Sauté the diced potatoes in the skillet for about 10 minutes until golden brown and tender.
  3. Add the diced bell peppers and onions, cooking for an additional 5 minutes.
  4. Make four small wells in the potato mixture and crack an egg into each well.
  5. Cover the skillet with a lid and cook the eggs to your desired doneness.
  6. Season with salt and pepper to enhance the flavors.
  7. Finish by crumbling the reserved bacon on top and garnishing with chopped parsley.

Notes

Store leftovers in an airtight container for 3-4 days. Reheat gently in a skillet or microwave.
