Breakfast Sweet Potato

A nourishing breakfast dish combining baked sweet potato, crispy bacon, eggs, and cheese for a delightful start to your day.

  • 1 large sweet potato
  • 2 slices of bacon
  • 2 eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potato thoroughly and pierce it multiple times with a fork.
  3. Place the sweet potato on a baking sheet and bake for 45-60 minutes, or until fork-tender.
  4. While the sweet potato is baking, cook the bacon in a skillet over medium heat until crispy. Remove and let it drain on paper towels.
  5. In the same skillet, crack the eggs and cook them to your desired doneness.
  6. Once the sweet potato is out of the oven, let it cool slightly before carefully cutting it open.
  7. Fluff the inside of the sweet potato with a fork, and layer in the cooked bacon, eggs, and shredded cheese.
  8. Season with salt and pepper to taste. Garnish with chopped green onions or parsley and serve warm.

Notes

You can swap cheese for feta or goat cheese, and use turkey bacon for a lighter option. For extra flavor, consider adding a drizzle of hot sauce or a dollop of avocado on top.
