Breakfast Taquitos

Crispy corn tortillas filled with fluffy scrambled eggs, savory sausages, and melty cheese, baked to perfection for a delightful breakfast.

Ingredients

  • 7-ounce box of fully cooked sausage links
  • 5 large eggs
  • Salt and freshly ground black pepper
  • 1 1/2 cups shredded cheese (your favorite kind)
  • 10 white corn tortillas (or use 6″ flour tortillas)

Instructions

  1. Preheat your oven to 425 degrees F.
  2. Warm the sausages in a skillet over medium-high heat, turning occasionally until heated through. Transfer to a plate.
  3. Whisk together the eggs with a splash of water or milk in a bowl. Pour into the skillet, season with salt and pepper, and scramble until fully set.
  4. Warm the tortillas in a hot, dry skillet until soft and pliable.
  5. Assemble each taquito by placing a portion of scrambled eggs, a sausage link, and a sprinkle of shredded cheese onto each tortilla. Roll tightly and place seam-side down on a lined baking sheet.
  6. Spray the tops of the taquitos with cooking spray. Bake for 10-15 minutes, or until golden brown and crispy.
  7. Serve warm with salsa for dipping.

Notes

For best results, warm your tortillas before filling to prevent cracking. Customize with your favorite ingredients!
