Instructions

  1. Slice the plantains and fry them in a pan with a bit of oil until golden brown. Toast your bread, spread a layer of peanut butter, layer it with the caramelized plantains, and finish with a dollop of yogurt.
  2. Cook diced sweet potatoes in a pan until tender. Crumble in the tofu, season to taste, and serve on toasted bread topped with fresh avocado slices.
  3. Grate the zucchini and sauté in a bit of oil until cooked down. Spoon onto toasted bread and top with vegan stracciatella cheese.
  4. Blend cream cheese with matcha powder until smooth. Spread on toast, then add fresh mango slices.
  5. Roast diced aubergine in the oven until tender. Combine with vegan chili and top the toast with the mixture and burrata cheese.
